Moroccan: Taktouka Salad

(serves 6)
Ingredients:
- 3 tablespoons olive oil, divided
- 1 large green pepper, seeded and coarsely diced
- 6 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- ¾ cup Chermoula herb sauce (see master recipe)
- 2 tablespoons tomato paste (approx)
- 2 tablespoons honey (approx)
- Salt to taste
- Cayenne pepper to taste
Procedure:
- Heat 1 tablespoon olive in a skillet, add diced green peppers; cook over high heat until slightly charred (about 10 minutes)
- Add remaining olive oil and garlic, saute for for 1 minute
- Stir in the tomatoes, reduce heat to low; cover and simmer for 5 minutes
- Stir in Chermoula sauce and tomato paste, simmer for another 2 minutes
- Add honey to balance out the sour (if needed)
- Add salt and pepper to taste (if needed)
- Serve with Khobz (Moroccan Flatbread)
